The perfect Scottish Loaf: Nick Nairn visits Bread Matters


In April 2013, as part of the BBC Scotland Landward series, well-known Scottish chef Nick Nairn visited Bread Matters at Macbiehill. There he made a loaf of sourdough bread with Andrew Whitley. The loaf was made entirely from Scottish organic wheat, grown by Angus McDowall in East Lothian. It didn't take much kneading, but it took a little time – and it was very well worth it, according to Nick.
