Slow Dough: Real Bread

Normally priced at £20, this collection of recipes for genuine sourdough and other long-ferment Real Breads, was brought together and edited by Chris Young who, as Coordinator of the Real Bread Campaign since 2009, continues to be at the forefront of the ‘Fight For Better Bread’.
With a foreword by Real Bread Campaign co-founder Andrew Whitley, Slow Dough Real Bread is the result of a collaboration between many of the Campaign’s most skilful bakers. It contains an erudite account of the Campaign’s purpose, as well as wise and simple advice on some of the basic principles of artisan baking. Almost 90 recipes, ranging from a basic white loaf to Laotian kalpao and Friesian fryske sûkerbôle, are brought to life by around 70 full colour photographs by Victoria Harley.
Bread recipes evolve over time. Since Andrew wrote Bread Matters in 2006 he has been continuously modifying and adapting recipes. Slow Dough – Real Bread features the 2016 remix of his pain de campagne (French style country bread).
